Whole-clusters in small crates are placed in concrete tanks, where an extended 30 day carbonic maceration occurs before pressing and racking to fiberglass. No sulfur is added to the wine at any point.
Deep purple hue – floral bouquet upfront with hints of berry fruit. A earthy medium bodied red with a juicy acidity matched with a smooth and elegantly dry finish.
Made right next to Olga Raffault Chinon in the hamlet of Savigny-en-Véron. This steeply sloped parcel of alluvial (eroded soil, reshaped by water) clay with chalky limestone base is home to a gorgeous collection of 60-year-old Cabernet Franc vines.
